4 Easy Dinner Ideas for Nights When You Forgot to Plan

It finally started to feel like spring here in Iowa and we were soaking it up ☀️
We spent the entire afternoon outside with the kids and neighbors. With daylight savings, the evening just flew by.
Before we knew it… it was 5:30 and we still had no idea what was for supper.
Honestly? That happens to us all the time when the weather is nice.
Suddenly someone asks the dreaded question:
“What’s for dinner?”
And you’re standing there realizing you never thought that far ahead.
So instead of scrambling or ordering takeout, we rotate through a few super simple meals we can throw together quickly.
Nothing fancy. Just meals we genuinely make on repeat.
1. Homemade Pizza with Greek Yogurt Crust 🍕
This is one of our absolute favorites because it’s quick and everyone loves it.
We make a simple Greek yogurt pizza crust that comes together fast and has a little extra protein compared to traditional crust. Here's the link to the crust recipe: Greek Yogurt Pizza Dough
Top it with whatever we have on hand and serve it with a balsamic glaze side salad.
It feels a little elevated but still super easy.
2. “Whatever Veggies We Have” Teriyaki Stir Fry 🥦
This is my ultimate clean-out-the-fridge meal.
We brown ground venison (but ground beef works great too) and toss in whatever vegetables we have in the fridge. My go to sauce is the Target Good & Gather Sesame Teriyaki.
Then everything gets put together and served over:
brown rice
jasmine rice
or Banza protein pasta
It’s quick, filling, and a great way to use up produce before it goes bad.
3. Whole Wheat Oatmeal Chocolate Chip Pancakes 🥞
Breakfast for dinner is always a win.
Our go-to pancakes are whole wheat oatmeal chocolate chip pancakes that we make from scratch. Here's my go-to recipe: Oatmeal Chocolate Chip Pancakes
*We follow this recipe but do not blend the batter and we just use two whole eggs instead of egg whites.
They’re super filling on their own, but sometimes we add:
fresh fruit
eggs on the side
This dinner feels cozy and easy — especially when we want something comforting.
4. Steak and Sheet Pan Roasted Veggies 🥩
This one sounds fancy but it’s actually one of the simplest meal.
We cook a simple steak and roast whatever vegetables we have on a sheet pan with olive oil and our favorite seasonings. We always season our steak with Worcestershire sauce and a classic steak seasoning. For the veggies I do whatever we have on hand and dice a few yellow and sweet potatoes I use Kinders buttery steakhouse and garlic salt.
Minimal prep, minimal cleanup, and always delicious.
